Its exceptional sharpness is maintained by sharpening it twice between rotating stone and subsequently polishing it on a leather wheel.
The birch handle has a rounded spine and heel. It’s eye-catching and has a traditional D-shape.The CRYODUR blade is ice-hardened to Rockwell 63 and is hand-honed using a 3-step Honbazuke process to a 9.5 to 12 edge. Recommended to hand wash only.
